Hi
I have a Bluetooth Music Reciever that I cant connect to with the Tab.
I tried with a Samsung phone, with Android 2.1, and that works, so - can I downgrade my tab?

Downgrade to Android 2.1 ?

I don't think you can as Samsung does not make a 2.1 firmware for the tab.
Plus downgrading will cause you to lose a whole lot of features that are not in 2.2
