It depends on the apps you want to use. Some apps, particularly games, can get quite large.
I have around 50 apps on my tablet totaling 1.65GB. My largest app is Google Chrome at 54MB, and my largest game is Angry Birds at 28.10MB. So, if your usage is similar, you should be fine. If at all possible/applicable, do try to configure the app to store any data/files on your external SDcard.

App size will vary greatly. The majority are rather small (under 50MB), but some could be very large (over 500MB). It just depends on the specific kind of apps you are interested in.

Well, you can get a gist of any problems people are having by looking at some of the threads here. As far as I know, there are no true problems with the hardware itself.
Some people have issues with the camera. The camera itself is not very high-quality and no auto-focus. Aside from that, there is an issue where the captured image will be just a gray square if the subject is complex (like grass, or leaves on trees).
The display is not gorilla-glass, but IS scratch resistant. It also seems to attract fingerprints, but a good screen protector reduces them a lot.
The processor is a bit dated. It's "only" a dual-core at 1GHz. May be a bit slow for some demanding games.
Some people have trouble getting Flash content to work in the browser. There is a thread on this too, along with a link to a version of the Flash app APK file that seems to work for 99% of the people.
Other than those common "issues", some of which may not even apply to you, it is a solid all-around performer with no common physical issues. Not as fast as some tablets on the market now, nor as cheap as others, but has the best mix of features IMO.

The biggest issue for some people is storage expandability. If you think 16GB is going to be enough for your apps, music, video, etc, then the Nexus is perfect IMO. The Galaxy tab has the ability to be expanded by an additional 64GB (it does work) for all your media files. Granted, unless you root the tab, you are still limited to the base 8GB for actual app storage.
There's also been some talk about the screen glass lifting on some of the early Nexus units, but I'd imagine that would be taken care of by this time. If not, that's what a warranty is for I guess. Sucks to have to wait to send it in, be fixed, and sent back though.
Keep in mind that JellyBean is still fairly new so there may be some app incompatibility at first. Of course, this should slowly go away as time goes on, but something to consider.

The CPU/GPU in the Ainol Flame tablet I was looking at was faster than the Galaxy tab, was cheaper, and had expandable storage. But, the supplier couldn't fill the order, so I am looking at the GT2 and Nexus7 as my only decent Android options (Kindle and Nook are too customized and I don't want to root them). So, I too have to decide if 16GB will be enough for everything despite the faster CPU/CPU on the Nexus, or take a hit on CPU/GPU performance for the Galaxy tab to get the extra storage option. I really think it was a mistake for the Nexus to exclude the SD card expansion slot. I mean, how much extra would it increase production cost? Like $5?

You can expand the memory on a Samsung Galaxy Tab 2 7.0 with Micro SD cards and you can't with a Nexus 7.

I think google wants us store anything on the network. They might not intend to cut the cost.

Yeah, I get that impression too, but if I wanted a company to tell me what I want and how to use my device, I'd just get an Apple product.
By the way, I just got my son a Nexus 7 for Christmas and spent the last 1/2 hour or so charging it, installing updates, and setting it up for him (it's always nice to be able to play right out of the box). I have to say that this is a really nice little tablet for the money. It is noticeably snappier doing everything than my tab. The only thing I don't like about it (aside from the lack of external storage) is the UI is more like a "phablet" with the notification bar on top and typical buttons on the bottom. Reduces screen real-estate a tad. But other than that, it's a nice little machine. I was going to get the 16GB version and hope it was enough, but decided to spring for the 32GB version just to be safe. So unless he gets crazy installing tons of large apps, he should be ok since he's not much for media, just games.
